Despite lacking the glamours reputation of other Central American coffee-growing countries such as Costa Rica, El Salvador, and Guatemala, Honduras has quietly become the region’s largest producer, exporting more coffee than any other country in Central America and ranking seventh worldwide.
This coffee is produced by Fair Trade–certified Café Orgánico Marcala, S.A. (COMSA) and grown on a network of small organic farms in Marcala, Honduras.
Founded in 2001 by a group of 61 coffee producers,12 women and 49 men, with an initial capital of approximately $365, COMSA has since become a model organization, recognized for the dynamic, responsible, and innovative vision of its partners.
With a strong focus on organic agriculture and high-quality coffee, COMSA successfully re-entered international markets, rebuilding the trust of global coffee buyers as well as Honduran producers themselves.
At harvest, carefully selected coffee cherries are pulped and placed in fermentation piles for an average of eight hours. Once fermentation is complete, the beans are washed and laid out to dry in open courtyards, where they are regularly turned until they reach a moisture content of 12%. Depending on weather conditions, the drying process can take up to ten days.
Coffee with a cocoa base, nutty and light floral notes, honey; it is round, sweet,
light-bodied and low in acidity.
