The Aguilera Brothers' coffee farm grows a variety of high-quality coffee, with their primary crop being Villa Sarchi, a naturally occurring dwarf mutation of Bourbon.
The family employs a unique method for processing their coffee, including Honey processing, which enhances the coffee’s flavor. This method leaves the mucilage intact during drying, and the drying process can result in different versions of Honey coffee—white, yellow, red, or black—each with distinct flavor profiles. Honey-processed coffees from Costa Rica, like those produced by the Aguilera family, are prized for their clarity, sweetness, and complexity.
These microlots are carefully sorted and processed to ensure only the best cherries make it to the mill, contributing to their high quality and traceability.
